Xmas Day Seafood Feast

Dreaming of a long lunch on Christmas Day with loads of fresh South Australian seafood. Why not try this delectable dish from Peter Clarke of the acclaimed Vintners in the Barossa Valley.

SA Snapper & Prawns with Beetroot Ginger Butter

Serves 6

6 x 150g pieces snapper fillet
18 shelled prawn tails
1 dessert spoon salmon roe
1 clove garlic 100ml vegetable oil
100ml reduced fish stock
1 knob ginger cut in julienne
1 tblspoon fine diced raw beetroot
100ml stones green ginger wine
Juice of 1-2 limes
180g butter diced in small cubes
Salt & white pepper Baby coriander - garnish

Sauce: Place the ginger and Stones green ginger wine in a pan & reduce by half, add reduced fish stock, bring to boil & remove from heat, squeeze in ½ the lime juice.

While still hot add the beetroot then slowly add 150g of butter stirring constantly until the butter is taken up by the sauce, set aside in a warm spot.
Dust the snapper in flour & pan fry with ½ the remaining butter & veg oil till just cooked through, season, in another pan sauté the prawns with the garlic and remaining butter till just cooked.

Place the sauce on the plate, then snapper with the prawns on top, garnish with baby coriander.

Our Sunny summer is just around the corner..

It's that time of the year again! The Outdoors on Parade girls have been busy little bees these last couple of weeks with a lot of our new summer stock arriving and quickly filling up the shop. Among the goodies we have already received were those from SunnyLife, one of our most favourite suppliers, who have introduced some truly fabulous pieces for summer into their 2009/10 range.

Introducing....

While our weekend at the trade fairs left us feeling excited about the new Christmas stock that will be arriving soon, it also awoke us to the reality that Christmas is really not that far away.. With only five months left of 2009, we realised that there are only a few of our cooking classes left to enjoy for the year. Cooking up a storm...

While the winter weather continued to pummel at our doorstep on Monday night, our kitchen sizzled and steamed with help from some spicy delicacies by Kenny Ting of Concubine.

The charismatic Kenny and his hardworking team prepared six mouthwatering traditional Chinese dishes that illustrated exactly why the Gouger St eatery was awarded Best Chinese Restaurant at the South Australian Catering and Restaurant Awards.

For those of you who were unable to attend, don't despair.. Try out Kenny's fabulous recipe for Tamrind Duck. A delicious yet simple recipe that will suit any occasion and leave you wanting more!

TAMARIND DUCK
Ingredients
1 cleaned duck [approx. 2 kg]
5 litre water
350ml soya sauce
350ml healthy boy sauce
250gm palm sugar
2 cinnamon sticks
100ml thick caramel sauce
30gm star anise
Tamarind sauce
1 can [375ml] tamarind pulp concentrate
200g palm sugar
1 tablespoon fish sauce


Method
  1. Mix all ingredients and bring it to boil.
  2. Put in the duck and simmer it for about 30 minutes or until duck is tender [add more water if necessary].
  3. Chop duck into smaller pieces and pour tamarind sauce over it to serve.

Farmyard fun...

On Sunday we were treated to a mouthwatering feast in the countryside. Within the rustic stone walls of an old barn dotted with hay bales, a reflectory teak table topped with a crisp white tablecloth, hot pink placemats, and patterned Italian tableware stretched ahead of a gorgeous pink, red, and white Marimekko canvas.
Following the delicious lunch, we channelled our inner Jill-a-roo's and marched toward the muddy cattle yards where we were determined to put our patterned gumboots to good use.




The stunning mid-winter weather also provided a fantastic opportunity for us to brainstorm and play around with ideas for our upcoming catalogue.. keep your eyes peeled for photos from our adventures on the farm that might feature!

Getting ready for summer...

It may only be July, but Christmas is slowly sneaking up on us and we can already hear the faint jingle of Santa's sleigh. Not only does this mean that plans for our new catalogue are well underway (make sure you're on our mailing list!), but also that it's time to start stocking up on fantastic Christmas gifts and goodies.
